Strawberry Rhubarb Compote Recipes

Ingredients :

1 pound thin young rhubarb, sliced 1/2 inch thick

1 pound strawberries, washed and hulled

1/4 cup honey

Method :

In a large saucepan, combine the rhubarb, strawberries, and honey. Bring to a boil. Reduce the heat and simmer gently for 10-15 minutes. Cool and serve chilled or at room temperature.

Serves 4

This is very simple to male. Try it as a "puddle" under honey flavored Nonfat Yogurt Cheese molded into a heart shape. This would make a nice presentation with a sprinkling of edible lavender blossoms over it. It also tastes very good all by itself.
