Preheat the oven to 325 degrees.
Core the apples. Remove an inch of peel at the top of the apple. Combine
the raisins, orange zest, brown sugar, ginger and cinnamon in the
container of a food processor. Pulse to combine. Stuff this mixture into
the hollowed cores of the apples, mounding a little on top. Place the
apples in a baking dish and place in the oven. Warm the honey in a small
pan. When it is liquefied, add the orange juice. Baste the apples with
this mixture every 10 minutes until the apples are tender and feel soft
to the touch, 40-60 minutes. Serve warm with yogurt seasoned with a
little honey and cinnamon. If desired.
