Banana Ice Cream on Cinnamon Tortillas with Caramel Sauce Recipes

large bananas, peeled and chopped
freshly squeezed lemon juice
ground nutmeg
egg yolks
caster sugar
milk
cream
flour or corn tortillas
caster sugar, extra
cinnamon
brown sugar
sour cream
butter
oil for deep-frying |
Method :

Blend or process banana with lemon
juice and nutmeg until quite smooth.

Combine egg yolks with sugar in a
medium bowl, beat with an electric mixer until pale and creamy.

Combine milk and cream in a medium
saucepan over a low heat, bring to the boil.

Slowly pour into the yolk mixture
while beaters are operating.

Stir in banana puree, mix well.

Pour mixture into a freezer-proof
container, freeze until just set.

Remove from freezer, beat mixture
until smooth and creamy, return to freezer, freeze until firm.

Deep-fry tortillas in hot oil one at a
time, for about 90 seconds, drain on absorbent paper; sprinkle wit
combined caster sugar and cinnamon.

Combine brown sugar, sour cream and
butter in a small saucepan over moderate heat.

Bring to the boil, reduce heat and
simmer for 4 minutes, cool.

Chill sauce until ready to serve.
