Hazelnut Ice Cream Recipes

Ingredients :

3/4 cup

1/2 cup

1 cup

1 cup

1/2 tsp

hazelnuts

caster sugar

cream

milk

freshly squeezed lemon juice

Method :
  1. Place hazelnuts in a baking dish, place in the centre of a preheated 180C oven until skins start to burst and nuts are golden beneath the skin.

  2. Shake pan from time to time.

  3. Place nuts in a kitchen towel, rub until most of the skin has come off.

  4. Place nuts in a processor, grind until very fine and oily, stopping once to scrape down sides.

  5. Add sugar, cream and milk, process until well combined.

  6. With machine running, add lemon juice to taste.

  7. Pour into an ice-cream machine, freeze according to manufacturer's instructions.

  8. Transfer to a freezer-proof container and freeze until firm.

  9. Remove to refrigerator 20 minutes before serving to soften slightly.

Makes 2.5 cups
