Lychee Sorbet Recipes

Ingredients :

450 g

175 g

115 ml

fresh lychees in their shells or

canned lychees

syrup

fresh mint sprigs, to decorate

Method :
  1. Peel fresh lychees and stone them. Place lychees in a food processor or blender with syrup and process to a smooth purée.

  2. Pour puree into a freezer proof container and place in the freezer for about 2 hours until almost set.

  3. Break up iced mixture and whip until smooth. Return mixture to the freezer for 30-45 minutes to set until solid. Serve sorbet decorated with mint leaves.

Serves 4-6
