Burnt Sugar Fudge Icing Recipe

Ingredients :

2 cups sugar

1/2 cup milk

2 tbsp burnt sugar syrup prepared for cake

1 tsp corn syrup

1 tsp butter

Method :

Combine ingredients in a heavy saucepan. Stir over moderately high heat until sugar is dissolved then boil without stirring until a few drops in cold water form a soft ball - 234F (112C) on candy thermometer. Let stand until lukewarm then beat until just beginning to get creamy (watch carefully or icing will get too hard to spread). Spread on Burnt Sugar Cake.
