Fruit and Cream Recipes

Ingredients :

1 cup

2 tsp

1x250g

cream, chilled

icing sugar, sifted

punnet strawberries, washed and hulled

apricot halves

pulp of 4 passion fruit

apricot jam

Method :
  1. Whip cream with icing sugar.

  2. Add flavoring of your choice.

  3. If using passion fruit: combine pulp of 3 passion fruit with the cream.

  4. Use to sandwich sponge cakes together and spread on top.

  5. Drizzle over remaining passion fruit pulp for decoration.

  6. If using strawberries: slice half the strawberries and combine with half the cream.

  7. Use to sandwich sponge cakes together.

  8. Decorate top of cake with remaining cream and whole strawberries.

  9. If using apricots: combine jam with half the cream.

  10. Use to sandwich sponge cakes together.

  11. Decorate top of cake with remaining cream and the apricot halves.

Makes for 1x18cm cakes
