Royal Icing Recipe

Ingredients :

3 Grade 1 or 2 egg whites

1/2 tsp lemon juice

675 g icing sugar, sifted

1 tsp glycerin (which prevents icing from becoming rock hard)

Method :
  1. Whip egg whites and lemon juice until frothy.
  2. Gradually beat in icing sugar, continuing until icing forms soft peaks when beaters are lifted out of bowl.
  3. Stir in glycerin then spread or swirl icing over top and sides of cake.
  4. If icing has been smoothly applied, pipe on decorations, add shop bought decorations to taste; small ornaments, sprigs of holly, etc.

If icing top of cake only, make up half the quantity above. If sides are left un-iced, tie a paper frill round the cakes.
