Lemon Date Tartlets Recipes

Ingredients :

1 oz butter

6 oz dates

1 oz caster sugar

1/2 a lemon

1/2 tsp finely grated lemon zest

1 egg, beaten

Method :
  1. Preheat the oven to 200C Gas Mark 6.
  2. On a lightly floured surface, roll out the pastry and use to line a tartlet tin, reserve the trimmings.
  3. Melt the butter and add the dates, sugar, lemon juice and zest, and the beaten egg.
  4. Mix well and cook over a low heat for a few minutes, stirring continuously, until the mixture thickens.
  5. Place a spoonful of the mixture in each pastry case.
  6. Roll out the pastry trimmings and cut them into thin strips.
  7. Place them over the filling, brush the pastry strips with milk or beaten egg to glaze.
  8. Bake for 15-20 minutes, until light golden brown.
  9. Transfer to a wire rack to cool.
  10. Serve warm or cold with cream or ice cream.
