Melting Moments Recipes

Ingredients :

3 oz butter

1 oz caster sugar

5 oz plain flour

little milk

few drops of vanilla essence

Filling:

2 oz butter, softened

4 oz icing sugar

1 tbsp milk

Method :
  1. Preheat the oven to 190C Gas Mark 5, grease a baking sheet.
  2. Beat the butter and sugar until very soft and creamy, then gradually beat in the flour, adding a little milk if the mixture becomes too stiff.
  3. Add the vanilla essence.
  4. Place spoonfuls of the mixture onto the baking sheet and bake for about 20 minutes.
  5. To make the filling, cream the butter in a bowl, then sift and beat in the icing sugar, adding just enough milk to make it soft enough to spread.
  6. Leave the biscuits to cool, then sandwich together with a filling.
