Chocolate Carrot Cake Recipe

self-raising flour

cocoa

bicarbonate of soda

brown sugar

apple, peeled and grated

eggs

chopped pecans

grated carrot

oil

orange juice

milk

mixed spice

cream cheese, softened

butter

icing sugar

dark chocolate, melted

butter, extra, melted

walnuts, finely chopped

strawberries. sliced

Method :
  1. Sift flour, cocoa and soda into a large mixing bowl.
  2. Add the brown sugar, apple, eggs, pecans, carrot, oil, orange juice, milk and mixed spice and mix well.
  3. Pour mixture into a greased and lined 20 cake tin.
  4. Cook at 180°C for 35 minutes.
  5. Cool in tin for 5 minutes, turn out onto rack and cool.
  6. Beat together the cream cheese, butter and icing sugar.
  7. Combine the melted chocolate, melted butter and cool until spreadable.
  8. Spread side of cake with half the cream cheese icing, turn on side and roll the iced cake along the walnuts to cover.
  9. Spread chocolate icing over top and leave to set, about 30 minutes.
  10. Pipe remaining cream cheese icing decoratively around top of cake, decorate with strawberries.
