Happy Easter Eggs Recipes

Ingredients :

6 small eggs

375g shelled shrimps

4 Chinese water chestnuts

plain flour

bread crumbs

1 beaten egg

salad dressing

a few strawberries

Seasoning

1/3 tsp salt

1 tbsp egg white

1 tsp caltrop starch

dash of sesame oil

pinch of pepper

Method :
  1. Peel and dice Chinese water chestnuts. Beat egg.

  2. Wash shrimps. Devein. Wipe dry and mash. Add seasoning, diced water chestnuts. Work into shrimp paste. Transfer into refrigerator to chill for 1 hour or overnight.

  3. Hard boil eggs and shell. Sprinkle with pinch of caltrop starch. Coat with shrimp paste. Arrange on greased plate. Steam for 6 minutes or until shrimps are cooked. Allow to cool. Coat with plain flour and dip into beaten egg. Dust with bread crumbs. Deep fry over medium heat until golden. Halve and arrange on plate. Garnish with fruit and salad dressing. Serve.
