Wash
shrimps. Devein. Wipe dry and mash. Add seasoning, diced water
chestnuts. Work into shrimp paste. Transfer into refrigerator to
chill for 1 hour or overnight.
Hard boil
eggs and shell. Sprinkle with pinch of caltrop starch. Coat with
shrimp paste. Arrange on greased plate. Steam for 6 minutes or until
shrimps are cooked. Allow to cool. Coat with plain flour and dip
into beaten egg. Dust with bread crumbs. Deep fry over medium heat
until golden. Halve and arrange on plate. Garnish with fruit and
salad dressing. Serve.
