Pikelet Faces Recipe

Ingredients :

whole meal self-raising flour

white self-raising flour

milk

grated orange rind

orange juice

oil

butter, melted

cocoa

honey

butter, extra, softened

extra butter, for pan

Method :
  1. Sift flours into bowl, make a well in the centre, add combined milk, orange rind, orange juice, oil and butter.
  2. Using a wooden spoon, stir until smooth.
  3. Place half a cup of the mixture into another bowl and add the cocoa and stir until smooth.
  4. Spoon cocoa mixture into a piping bag, fitted with a plain tube.
  5. Heat extra butter in pan.
  6. Pipe eyes and mouth on to pan and leave to cook for 30 seconds.
  7. Gently pour a tablespoon of orange pikelet mixture on top of the face and turn pikelet over when bubbles begin to appear.
  8. Lightly cook other side and remove from pan.
  9. Repeat with remaining mixture.
  10. Serve with the honey butter.
  11. To make honey butter.
  12. Stir honey into butter until combined.
