Potato and Egg Salad Recipe

bacon rashers, chopped
baby new potatoes, halved
hard-boiled eggs, sliced
red capsicum, seeded and chopped
stalk celery, chopped
mayonnaise
sour cream
French dressing
chopped chives
chopped basil
chopped parsley |
Method :
- Cook bacon until crisp.
- Cook potatoes until just tender.
- In a large bowl, combine potatoes,
eggs, capsicum and celery.
- In a small bowl, mix mayonnaise, sour
cream, French dressing and herbs
- Pour dressing over salad, sprinkle
with crisp bacon pieces.
