Rabbit Mousse Recipes

Ingredients :

495g gelatine powder

375g sugar

500ml boiled water

about 75g desiccated coconut

jam

Method :

Mix gelatine powder with sugar, add boiled water and stir. Dissolve over low heat. Use a hard whisk to whisk the mixture until fluffy. Pour it into a forcing bag. Pipe out large drops of about 4cm. Sprinkle evenly with desiccated coconut. Chill in refrigerator for at least 3 hours. Take the mousse out. At the upper part of each  mousse, near the pointed tip, make a small cut horizontally, don't cut through. Make a vertically cut in the protruded part now appears and this becomes the two ears of the rabbit. Dot the eyes using the jam. Serve immediately.
