Blueberry Muffins Recipe

Ingredients :

150g ripe blueberries

15g brown sugar

250g wholemeal self raising flour

1 tsp baking powder

1 tsp ground cinnamon

1 egg

125ml low fat berry yoghurt

1 cup skimmed or low fat milk

Method :
  1. Wash blueberries and combine with sugar in saucepan.
  2. Heat gently until juice just starts to run.
  3. Sift flour, baking powder and cinnamon into bowl.
  4. Mix egg, yoghurt and milk in a bowl.
  5. Add to flour and blend until smooth.
  6. Gently fold blueberries into mixture.
  7. Spoon mixture into lightly greased muffin tins, and bake in a preheated oven for 15-20 minutes until firm and very lightly browned.

Makes : 12 muffins
