Preheat the
oven to 350F, Gas 4. Grease twelve 125ml muffin holes. Soak the dried
fruit in a bowl with 3 tablespoons boiling water for 5 minutes. Sift the
flour and baking powder into a large bowl, returning the husks to the
bowl. Stir in the oat bran and sugar and make a well in the center.
Combine the milk, egg and oil in a jug. Add the soaked fruit and milk
mixture all at once to the dry ingredients. Fold in gently using a metal
spoon, until just combined. Divide evenly among the muffin holes. Bake
for 20 minutes, or until golden and a skewer inserted into the center
comes out clean. Cool for a few minutes in the tin, then turn out onto a
wire rack.
