Lovely Muffins Recipe

Ingredients :

1.75 cups

2-3 tbsp

1 tsp

3/4 cup

1/3 cup

self-raising flour

caster sugar

baking powder

egg, slightly beaten

milk

butter, melted

Method :

1. Heat the oven to 200^oC .

2. Brush oil into bottoms only of 12 six-cm muffin tin cups.

3. Sift flour, sugar and baking powder 3 times in a bowl.

4. In a small bowl, combine egg, milk and melted butter.

5. Add liquids all at once to flour mixture.

6. With a fork, stir gently until all dry ingredients are just moistened.

7. Batter should look quite lumpy.

8. Scoop batter into each muffin cup, filling 2/3 full.

9. Bake 20-25 minutes until golden brown.

10. Loosen muffins with a spatula and remove at once to a wire rack.

11. Serve warm.
