Combine flour
and salt in a bowl. Add lard and cut in coarsely with a pastry blender.
Add cheese and mix in lightly with fork. Sprinkle in water 1 tbsp at a
time, mixing lightly with a fork just until all flour is dampened. Gather
dough into a ball and press together firmly with fingers. Divide dough
into 2 pieces, roll each piece thin and cut as directed in recipe.
