Farmhouse Fruit Pie Recipe

Ingredients :

Filling :

Pastry :

350 g

4 tablespoons

 

fine oatmeal

ground cinnamon

ground ginger

cooking apples, cored and sliced

pinch ground cloves

 

whole meal flour

salt

margarine

water

milk to glaze

Method :
  1. Heat the oven to 200oC (400oF), Gas 6.
  2. To make the filling, mix together the oatmeal, spices, and the grated lemon rind and juice.
  3. Toss the apples in the spice mixture.
  4. To make the pastry, mix together the flour and salt and rub in the margarine until the mixture resembles fine bread crumbs.
  5. Mix with just enough water to form a stiff dough.
  6. Turn on to a lightly floured surface and knead lightly until smooth.
  7. Divide in half.
  8. Roll out one piece and line a 23 cm tart tin.
  9. Spread the fruit over the pastry and dampen the edges.
  10. Roll out the remaining dough, cover the pie and brush with milk.
  11. Trim and pinch the edges together to seal.
  12. Re-roll the trimmings, cut into decorative shapes, such as leaves, and place on the pie.
  13. Brush with milk.
  14. Bake for 35-40 minutes.
  15. Serve hot or cold.
