1 10 ounce package Gardenburgers,
pregrilled, crispy and diced into 1/4 inch cubes
3/4 cup yellow cornmeal
1/2 tsp salt
1 cup grated reduced fat jack cheese,
dairy or substitute
Method :
Heat 1/2 cup
of water in a large nonstick skillet and add the onions, garlic, and
bell pepper. Cook until the onion is soft, about 5 minutes. Add the
tomatoes, beans, corn, chili powder and black pepper. Simmer 20 minutes,
then stir in the diced Gardenburger pieces. Spread in a 13 x 9 inch
baking dish.
Combine the
cornmeal, salt, and 2 cups of water in a saucepan. Cook, stirring
constantly, until the mixture becomes very thick. Remove from the heat
and stir in the grated cheese. Preheat the oven to 350F. Spread the
cornmeal mixture evenly over the pie. Bake 40 minutes.
