Anna's Continental Apple Cake Recipes

Ingredients :

carton sour cream

bicarbonate of soda

self-raising flour, sifted

green cooking apples, peeled, cored and sliced

 

chopped walnuts

sugar

cinnamon

Method :

Preheat oven to 180C, grease and line a 26 x 30cm baking tin. To prepare base: cream butter and sugar until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Beat in sour cream and soda. Add flour, folding lightly into mixture. Pour mixture into prepared tin, arrange apples on top. Combine topping ingredients and sprinkle over apples. Bake for 35-40 minutes. Cool in tin, cut into squares to serve, remove paper and store in an airtight container.

Makes about 50

The moist apple cake is best eaten within 2 days of baking. It can also be served as a dessert with whipped cream.
