Apricot Slice Recipes

Ingredients :

self-raising flour, sifted

untoasted muesli

rolled oats

desiccated coconut

brown sugar

chopped dried apricots

sultanas

butter

honey or golden syrup

eggs, lightly beaten

Method :
  1. Preheat oven to 180C and grease an 18 x 28cm shallow tin.
  2. Combine flour, muesli, oats, coconut, sugar and fruit in a bowl.
  3. Melt butter and honey together in a small pan.
  4. Pour over dry ingredients and mix well.
  5. Stir in eggs, blend in well.
  6. Press mixture into prepared tin and bake for 30 minutes.
  7. Cool in tin, cut when cold and store in an airtight container.

Makes about 24

This fruity slice is filled with health and fiber. A great slice for the school lunch box.
