Method :
- Preheat oven to 180C, grease and
line a 23 x 13cm loaf tin.
- Combine butter, sugar, dates and
pecans in a large bowl.
- Mix well, add water.
- Stir until butter has melted, fold
in remaining ingredients.
- Spoon mixture into prepared tin
and bake for 45-50 minutes or until cooked when tested.
- Cool on a wire rack.
- Store in an airtight container.
- Serve sliced and buttered.
Makes 1 cake
This cake freezes well. When cold, wrap
and freeze. Delicious topped with coffee icing or cream cheese frosting.
