Date and Pecan Loaf Recipes

Ingredients :

90g

1/2 cup

1 cup

1.75 cups

butter, chopped

brown sugar

chopped dates

chopped pecans

boiling water

self-raising flour, sifted

cinnamon

ground ginger

Method :
  1. Preheat oven to 180C, grease and line a 23 x 13cm loaf tin.
  2. Combine butter, sugar, dates and pecans in a large bowl.
  3. Mix well, add water.
  4. Stir until butter has melted, fold in remaining ingredients.
  5. Spoon mixture into prepared tin and bake for 45-50 minutes or until cooked when tested.
  6. Cool on a wire rack.
  7. Store in an airtight container.
  8. Serve sliced and buttered.

Makes 1 cake

This cake freezes well. When cold, wrap and freeze. Delicious topped with coffee icing or cream cheese frosting.
