Date Slice Delight Recipes

Ingredients :

250g

1.5 cups

2.5 cups

1.25 cups

375g

1 cup

1 cup

1.5 cups

pitted dates

orange juice

plain flour

brown sugar

butter, cut in pieces

desiccated coconut

chopped pecans or walnuts

rolled oats

Method :
  1. Preheat oven to 180C and grease a 26 x 30cm baking tin.
  2. Simmer dates in orange juice, stirring occasionally until thickened.
  3. Remove from heat.
  4. Combine flour and sugar, rub in butter until crumbly.
  5. Stir in coconut, pecans and oats, and mix well.
  6. Press half the mixture into prepared tin, patting flat.
  7. Spread with date mixture to 1cm from edges.
  8. Top with remaining oat mixture and press flat.
  9. Bake for 45-50 minutes until firm and golden.
  10. Cool in tin before cutting.

Makes about 48

Date slices are always popular. This variation is delightful. It will store well in an airtight container for up to 4 days.
