Poached Pears with Honey and Cinnamon Recipes

Ingredients :

grated rind and juice of 1 lemon

450ml red wine

150ml water

5 tbsp clear honey

1 mace blade

1 cinnamon stick

6 cloves

4 ripe pears, peeled

Greek yogurt, to serve

Method :
  1. Put the lemon rind and juice, red wine, water, honey, mace, cinnamon and cloves into a saucepan and bring to a gentle boil.

  2. Add the pears and simmer for 10 minutes, until they are soft, turning them occasionally.

  3. Remove the pears with a slotted spoon and set aside.

  4. Transfer the liquid to a saucepan with a larger surface area.

  5. Place the pan on a high heat and boil rapidly to make a rich, thick, sticky syrup.

  6. Spoon the liquid over the pears and serve with Greek yogurt.
