Ingredients :
1/2 cucumber, peeled
200g low fat natural yoghurt
1 tsp finely chopped or minced fresh ginger
1/2 tsp minced garlic
1 tbsp lemon juice
1/4 tsp freshly ground black pepper
1/4 tsp mild paprika
1 tbsp chopped parsley
4 cardamom pods, crushed
Method :
Grate cucumber, drain well and discard liquid. Combine all the ingredients in a bowl and chill well before serving. Use this sauce straight away because it will not keep.
Serves 4 - 6
