Frozen Fruit Yoghurt Sticks Recipes

Ingredients :

1 orange

125g dried apricots

1 tsp apple juice concentrate

500ml low fat, natural yoghurt

Method :
  1. Finely grate the zest of the orange and measure off 1 tsp.
  2. Squeeze the orange to extract 1/2 cup of juice.
  3. In a small saucepan, combine the orange juice and zest, dried apricots and apple juice concentrate.
  4. Simmer gently for about 15 minutes, or until apricots are tender.
  5. Purée the apricots in a blender or food processor.
  6. Leave to cool.
  7. Pour the yoghurt into a jug.
  8. Fold in the apricot purée.
  9. Pour into icy-lolly moulds and insert sticks, or pour into an ice cube tray.
  10. Freeze for several hours, or overnight.

Serves 4 - 6
