Method :
- Finely grate the zest of the
orange and measure off 1 tsp.
- Squeeze the orange to extract 1/2
cup of juice.
- In a small saucepan, combine the
orange juice and zest, dried apricots and apple juice concentrate.
- Simmer gently for about 15
minutes, or until apricots are tender.
- Purée the apricots in a blender or
food processor.
- Leave to cool.
- Pour the yoghurt into a jug.
- Fold in the apricot purée.
- Pour into icy-lolly moulds and
insert sticks, or pour into an ice cube tray.
- Freeze for several hours, or
overnight.
