Method :

Peel
the oranges, taking care to remove every trace of the white pith.

Very
thinly slice them - an electric carving knife makes a superb job of
it - and discard any seeds.

Scatter the raisins over the orange slices and any juice.

Mix
all the dressing ingredients.

Pour
the dressing over the oranges and very carefully toss them, without
breaking.

Cover
and chill for at least 30 minutes.

Scatter with the almonds to decorate.
