Plum and Apple Strudel with Vanilla Yogurt Recipes
Ingredients :
400g apples, peeled, cored
825g dark plums in syrup, drained
2 tsp finely grated lemon rind
75g firmly packed brown sugar
60ml maple flavoured syrup
60ml water
1 cinnamon stick
60g almond meal
6 sheets filo pastry
cooking oil spray
Vanilla yogurt
80ml skim milk
180ml low fat yogurt
2 tsp vanilla essence
40g icing sugar mixture
Method :
Cut each
apple into 12 pieces. Halve plums, discard stones. Combine apple, rind,
sugar, maple syrup, water and cinnamon in large pan, stir over heat,
without boiling, until sugar dissolves. Bring to boil; simmer,
uncovered, 10 minutes or until apple is just tender, stirring
occasionally. Drain apple mixture discard cinnamon and syrup; cook.
Combine
apple, plums and almond meal in bowl; mix gently. Layer pastry sheets
together, coating every second sheet with cooking oil spray. Spoon apple
mixture along long edge of pastry, leaving 8cm border at each end. Roll
up strudel, tucking in ends while rolling; coat lightly with cooking oil
spray.
Place strudel
on oven tray which has been coated with cooking oil spray, bake,
uncovered, in moderate oven about 30 minutes or until browned. Serve
dusted with sifted icing sugar and candied lemon rind, if desired. Serve
with Vanilla Yogurt.
