Quick Yoghurt Bread Recipe

Ingredients :

500g wholemeal flour

2 tsp bicarbonate of soda

2 tbsp clear honey

500ml full cream natural yoghurt

1 tsp salt, optional

1 tbsp sesame seeds, optional

Method :
  1. Place the wholemeal flour, unsifted, in a large bowl.
  2. Add all remaining ingredients, except the sesame seeds, if using.
  3. Use a wooden spoon to mix lightly but well, until mixture is almost fluffy.
  4. Spoon mixture into the greased loaf tin.
  5. Sprinkle with sesame seeds, if using.
  6. Bake in a preheated oven for 50 minutes - 1 hour, or until loaf sounds hollow when tapped.

To vary - Add 60g roughly chopped pecan nuts or walnuts. Alternatively, try adding 60g sunflower seeds or raisins.

Makes : 1 loaf
