Feathered Icing Recipes

Method:

  1. Make up enough glace icing to cover the top of the cake to be iced.

  2. Remove approximately 1 tbsp of prepared icing and tint a contrasting color to the glace icing.

  3. Place in a piping bag with a size O tube fitted, or alternatively, place in a greaseproof paper icing bag which has had only the tip cut off.

  4. Ice cake with the larger portion of icing and while still wet, pipe lines of contrasting icing over the damp icing at 2-3cm intervals

  5. Turn the cake around so the lines are running horizontally across the cake.

  6. Draw a fine skewer across the cake at 2-3cm intervals.

  7. Turn cake around and draw skewer across cake in opposite direction to form a feather pattern.
